Brinjal potato curry is a tasty dish which tastes good with white rice, roti, chapathi.

Below are the required ingredients to prepare brinjal potato curry:
|1||Brinjals: 250 gram|
|2||Potatoes: 2 (big size)|
|3||Onions: one (big size)|
|5||Ginger Garlic paste: 1 tea spoon|
|6||Black gram (mina pappu): 1 tea spoon|
|7||Bengal gram (senaga pappu) : 1 tea spoon|
|8||Salt to taste.|
|9||Coriander: one sprig(optional)|
|10||Turmeric Powder: 1/2 spoon|
|11||Red chili powder: 2 tablespoon|
|12||Oil: 3 table spoons|
Take a bowl and add some water, little bit of salt to the bowl and mix them. Wash and clean the brinjals and cut the brinjals into small slices and drop them in the water. If you not drop the brinjal pieces in salt water they turn into black color.
Wash and clean potatoes. Cut the potatoes into small pieces. Don’t mix with brinjal slices they turn into black color.
Wash and chop the onion and green chilies.
Preparing brinjal potato curry in 7 simple steps:
Step 1: Take a cooking pan or vessel pour the oil and heat it for1 minute in low flame
Step 2: Add Bengal gram, black gram fry it till it changes to golden brown
Step 3: Add curry leaves, chopped onions, green chilies, ginger garlic paste and fry them until they changes to golden brown in color.
Step 4: Add chopped birnjal pieces and potato pieces. Add salt, turmeric powder and red chili powder mix them well. Cooks for 5 minutes covered by a lid.
Step 5: Remove the lid and add 75 ml water, coriander leaves and cover by a lid cook it till the brinjals and potatoes are properly cooked finally curry ooze the oil out.
Step 6: Turn off the flame and move it into a serving bowl and serve hot
Points to Observe: potatoes take more time to cook than the other vegetables.
