BRINJAL PULUSU (VANKAYA PULUSU)

Brinjal pulusu is a tasty dish which tastes good with white rice, roti, chapathi.

 

 

Now let’s get to know how to prepare Brinjal Pulusu (Vankaya Pulusu):

 

Below are the required ingredients to prepare Brinjal pulusu (Vankaya Pulusu):

 

1 Brinjals: 250 gram (long and purple color)
2 Tamarind:1 cup ( Add Water Until The Tamarind Is Immersed And Squeeze To Make Pulp)
3 Onions: one (bigsize)
4 Chilies: one
5 Curry leaves: one sprig
6 Black gram (mine Pappu): 1 teaspoon
   
7 Salt to taste.
8 Coriander: one sprig(optional)
9 Turmeric Powder: 1/2 spoon
10 Red chili powder: 2 tablespoon
11 Oil: 3 tablespoons

 

Take a bowl and add some water, little bit of salt to the bowl and mix them.

Wash and clean the brinjals and cut the brinjals into pieces and drop them in the salt water . If they are put in the salt water they would not turn into black color and also removes the bitterness of brinjals

 

Wash and chop the onion and cut  green chilies verticaly.

 

Preparing Brinjal Pulusu (Vankaya Pulusu) in 7 simple steps:

Step 1:  Take a cooking pan or vessel pour the oil and heat it for 1 minute on low flame

Step 2:  Add  black gram fry it till it changes to golden brown

Step 3:  Add curry leaves, chopped onions, green chilies and fry them until they changes to golden brown in color.

Step 4:  Add chopped birnjal pieces and cook them covered by a lid for 5 minutes. Remove the lid add salt, turmeric powder and red chili powder mix them well. Add some water(50 ml) when water boils add tamarind juice  and cook until brinjals are  cooked covered by a lid.

Step 5:  Finally add coriander leaves

Step 6: Finally curry ooze the oil out, turn off the flame and move it into a serving bowl and serve hot
