Brinjal with Drumstick curry is a tasty dish which tastes good with white rice, roti, chapathi.



Now let’s get to know how to prepare Brinjal with Drumstick Curry (Vankaya Mulakaya Kura):


Below are the required ingredients to prepare Brinjal with Drumstick curry :


1 Brinjals: 250 gram (long and purple color)
2 Drumsticks:2
3 Onions: one (bigsize)
4 Chilies: one
5 Curry leaves: one sprig
6 Black gram (mine Pappu): 1 teaspoon
7 Ginger garlic paste: 1 teaspoon
8 Salt to taste.
9 Coriander: one sprig(optional)
10 Turmeric Powder: 1/2 spoon
11 Red chili powder: 2 tablespoon
12 Oil: 3 tablespoons


Take a bowl and add some water, little bit of salt to the bowl and mix them.

Wash and clean the brinjals and cut the brinjals into pieces and drop them in the salt water . If they are put in the salt water they would not turn into black color and also removes the bitterness of brinjals.


Wash and clean the drumsticks cut into 2 inch pieces.


Wash and chop the onion and green chilies.


Preparing Brinjal with Drumstick Curry (Vankaya mulakaya Kura) in  6 simple steps:

Step 1:  Take a cooking pan or vessel pour the oil and heat it for 1 minute on low flame

Step 2:  Add  black gram fry it till it changes to golden brown

Step 3:  Add curry leaves, chopped onions, green chilies, ginger garlic paste and fry them until they changes to golden brown in color.

Step 4:  Add chopped birnjal pieces and drumstick pieces cook them covered by a lid for 5 minutes. Remove the lid add salt, turmeric powder and red chili powder mix them well.

Step 5:  Add water and cook covered by a lid until brinjal and drumsticks are properly cooked

Step 6: Finally curry ooze the oil out, turn off the flame and move it into a serving bowl and serve hot
