Vankaya fry is a tasty dry dish which tastes good with plain white rice
Vankaya fry can also be served as a munching snack in sambar rice, rasam rice or curd rice according to your preference.
Now let’s get to know how to prepare vankaya fry (brinjal fry):
Below are the required ingredients to prepare vankaya fry (brinjal fry):
|1||Carrots: 250 grams|
|2||Onions: one (big).|
|3||Green Chilies: one|
|4||Curry leaves: one sprig|
|5||Bengal gram (senaga pappu) : 1 spoon|
|6||Salt to taste.|
|7||Coriander: one sprig.|
|8||Turmeric Powder: 1/2 spoon|
|9||Ginger and garlic paste: 1 /2 spoon.|
|10||Red chili powder: 1 spoon|
|11||Oil: 2 spoons (If you prefer deep fry add 2 more spoons of oil)|
Take a bowl and add some water, little bit of salt to the bowl and mix them.
Wash and clean the brinjals and cut the brinjals into pieces and drop them in the salt water. If they are put in the salt water they would not turn into black color.
Wash and chop the onion and green chilies.
Preparing carrot fry in 7 simple steps:
Step 1: Take a cooking pan or vessel pour the oil and heat it for 1 minute in low flame
Step 2: Add Bengal gram fry it till it changes to golden brown
Step 3: Add curry leaves, chopped onions, green chilies and fry them for until they changes to golden brown color
Step 4: Add chopped brinjal pieces cook them by covering the cooking pan or vessel with a lid for 5 minutes
Step 6: Remove the lid add turmeric powder, salt to taste, ginger garlic paste and fry them for 2 minutes while mixing them well
Step 7: Finally add the red chili powder and cook it till the brinjals are properly cooked and fried
Optional: Based on your preference you can add garam masala (optional), coriander leaves, and mix.
Turn off the flame and move it into a serving bowl and serve hot
