Below are the required ingredients to prepare vanakaya senagapappu curry:
|1||Brinjals: 250 grams|
|3||Onions: one (bigsize)|
|5||Ginger Garlic paste:1 tea spoon|
|6||Garam Masala:1 tea spoon|
|7||Curry leaves:1 sprig|
|8||Salt to taste.|
|9||Coriander: one sprig(optional)|
|10||Turmeric Powder: 1/2 spoon|
|11||Red chili powder: 2 tablespoon|
|12||Oil: 3 tablespoons|
Take a bowl and add some water, little bit of salt to the bowl and mix them. Wash and clean the brinjals and cut the brinjals into small slices and drop them in the water. If you not drop the brinjal slices in salt water they turn into black color and they become bitter in taste.
Wash and clean senagapappu and soak in one cup of water at least half hour. Cook them till they are half cooked.Becaeful while cooking senagapappu not to overcook them as they get mushy. Still if they have water after cooking don’t drains the water, to use that water while cook the curry.
Wash and chop the onion and green chilies.
Preparing vankaya senagapappu curry in 7 simple steps:
Step 1: Take a cooking pan or vessel pour the oil and heat it for1 minutes in low flame
Step 2: Add curry leaves, chopped onions, green chilies, ginger garlic paste and fry them until they changes to golden brown in color.
Step 3: Add chopped birnjal slices. Add salt, turmeric powder and red chili powder mix them well. Cook for 5 minutes covered by a lid.
Step 4: Remove the lid and add cooked senapappu, water, coriander leaves and cover by a lid cook it till the brinjals and senagapappu are properly cooked.
Step 5: Finally add garam masala and cook until curry ooze the oil out.
Step 6: Turn off the flame and move it into a serving bowl and serve hot
